Our favorite restaurant is Maggiano's and our favorite dish there is the Rigatoni D. We found several recipes online and experimented and combined them to come up with something that works. Here's our creation. If you get a chance, try it out. Or just invite yourself over and we'll make it for you!
Maggiano's Little Italy Rigatoni di Gregorio…aka: Rigatoni D
(Serves 6)
Ingredients:
1) 5 oz. button mushrooms
2) 3/4 Spanish yellow onion, chopped
3) 8 oz. chicken breast (raw), cut into 1 to 1 1/2 inch
pieces
4) 16 oz. rigatoni
5) 1/2 tbsp. basil and parsley mix
6) 1 tbsp. grated parmesan cheese
7) 1 oz. butter
8) salt and pepper to taste
9) 1 tbsp. extra virgin olive oil
10) 1 tsp. garlic puree
11) 1 oz. white wine (Pinot Grigio or Chardonnay)
12) 4 oz. Marsala wine
13) 12 oz. chicken broth
14) 1/2 qt. heavy cream
Cooking Instructions:
1) Heat oil. Saute mushrooms, onion, and
garlic. Brown lightly and season with salt and
pepper. Add chicken and cook until cooked through.
2) Add white wine, Marsala and chicken stock. Bring to a boil and then reduce to a simmer. Reduce by half (about 15-20 minutes). Add cream and bring to a boil.
3) Turn down heat and simmer to skim away any
Impurities and let sauce thicken (about 10 minutes).
4) Cook rigatoni al dente.
5) Add drained rigatoni to pan and finish with
basil-parsley mix, parmesan cheese, butter,
and salt and pepper.
6) Place in pasta bowl and garnish with parmesan shavings and chopped parsley.
